Using cauliflower to make “rice” or “grains” is an easy hack that adds nutrition without sacrificing flavor. Here, it works beautifully with fresh mint and herbs in this Middle Eastern salad.
SERVES 8 · PREP 25 MINS
1 small cauliflower head
1 cup chopped flat-leaf parsley
1 cup chopped curly parsley
1 cup diced, seedless cucumber
1 cup diced tomato
1 small bunch green onions, white and green parts thinly sliced
1 cup cooked brown lentils
½ cup chopped mint
Zest and juice 2 lemons
2 tbsp olive oil
Salt and pepper
1. Remove outer leaves from cauliflower head and break into florets. Place in a food processor and pulse 6 to 7 times until cauliflower resembles rice or bulgar.
2. In a large mixing bowl, combine cauliflower, flat-leaf parsley, curly parsley, cucumber, tomato, green onion, lentils, and mint. Add lemon zest and juice and olive oil and toss to combine. Taste and season with salt and pepper. Transfer to a serving dish and serve immediately.
