RAINBOW LENTIL MEATBALLS WITH ARRABIATTA SAUCE

 

Lentil meatballs and spicy tomato sauce are a healthy alternative to the comfort food classic, loaded with protein and fiber. Serve with pasta or bread and Parmesan cheese.

MAKES 18 · PREP 15 MINS · COOK 40 MINS

1 ½ cups cooked red lentils, thoroughly drained
⅔ cup cooked brown lentils, thoroughly drained
1 large egg, lightly beaten
½ cup panko breadcrumbs
½ tsp garlic powder
1 tsp dry oregano
Zest 1 large lemon
¼ tsp ground cayenne pepper
2 tbsp olive oil
1 small yellow onion, minced
28oz (800g) can crushed tomatoes
1 tbsp red pepper flakes
Salt and pepper

1. Preheat the oven to 350°F (180°C). Spray a baking sheet with cooking spray. In a large mixing bowl, combine red lentils, brown lentils, egg, breadcrumbs, garlic powder, oregano, lemon zest, and cayenne.

2. With your hands, form approximately 1 tablespoon lentil mixture into a meatball and place on the baking sheet. Repeat with remaining mixture. Bake for 25 minutes, rotating meatballs halfway through.

3. Meanwhile, to make arrabiatta sauce, in a saucepan warm oil over medium-low heat. Add onion and cook for 2 minutes, or until soft. Add crushed tomatoes and red pepper flakes. Simmer over low heat for 15 minutes, or until sauce is warmed through. Taste and season with salt and pepper.

4. Place meatballs on serving plates, top with arrabiatta sauce, and serve immediately.
