Fermenting Food 101

Fermentation is akin to alchemy. Given the right conditions, simple ingredients can come together and undergo a transformation to become something entirely different and new – for example, adding yeast to barley or wheat will give you beer, and combining cabbage and salt will create sauerkraut.

Fermenting Food Step by Step explains the process in easy illustrated steps, and includes tasty recipes for pickles of all sorts, condiments, yogurt and sour cream, simple cheeses, sourdough and buttermilk, ciders and meads, vinegars, and much more.
